Fresh Cranberry Relish

During the winter months I love making foods that jump start the system into feeling alive again. Cranberries are especially powerful, and this time of year fresh ones are readily available. This recipe can be sweetened to your own taste and enjoyed alone or on a turkey sandwich. Enjoy!



1 bag fresh Cranberries
1 Orange, unpeeled
1 Apple, cored & unpeeled
1/2 Cup Honey (to taste)
6 - 10 Fresh Dates, chopped
2/3 Cup Walnuts, chopped

Optional: A couple tablespoons of fresh grated ginger root

Note: I always freeze my cranberries and then slightly thaw for this recipe, as it reduces the amount of juice during processing.

Pulse cranberries in food processor until broken down into smaller bits. Add orange and apple (cut into medium sized chunks) and pulse until well combined. With the food processor on low, add honey and dates. Once well combined, stir in walnuts. For best results, refrigerate at least 3 hours.
