Hmmm...no Summer fruit, but lots of Summer jam. After rooting around my cupboards I came across Oat Flour, Walnuts, and Oats. So I figured it was time to whip up some sort of Oat-y, fruity goodness. This creation is a cross between an Oat Bar and a tart - leaning more towards an oat bar.

1 cup Oat Flour
1 cup Walnut Meal (pulse walnuts in food processor until they become a fine meal)
1 cup Rolled Oats
5 Tbsp Chilled Butter, cut into small cubes
4 Tbsp Brown Sugar
1 - 3 Tbsp Ice Water (as needed)
Jam - 1.5 to 2 cups ( I used Apricot Raspberry)
2 Tbsp Lemon Zest
Preheat oven to 375.
Pulse Oat Flour, Walnut Meal, Brown Sugar and Rolled Oats together in a food processor until combined. Add the chilled butter and pulse until the mixture resembles course cornmeal. I also ended up adding 1 Tbsp of ice water to help bring the mixture together slightly.
Press half of mixture into a lightly greased tart pan. Mix jam and lemon zest together and spread on prepared crust. Top with the remaining oat mixture.
Bake for 30 minutes or until the top is nice and golden brown. Let cool completely before cutting and serving.
