Weeknight BBQ Chicken Pizza

Pita Bread 
+
BBQ Sauce  
(Sidenote: can I just say that it is nearly impossible to find a 
decent BBQ sauce without High Fructose Corn Syrup?! Yikes. Any suggestions?)

Shredded Chicken
+
Thinly Sliced Red Onion
+
Shredded Jack Cheese
(Or if you're feeling particularly snazzy - Gouda is a great option.)
+
Cilantro

Directions: Spread pita with BBQ sauce; add a light layer of cheese, then red onion, shredded chicken, and more cheese. Broil for approximately 10 minutes (just keep an eye on it). Add chopped cilantro before serving.

This is one tasty pizza - especially when you're just home from work and the sun has been down for hours.

I got my free November Sample Box from Foodzie this morning, and it did not disappoint. For one thing, you should know that I jump up and down whenever I receive a package of any sort in the mail. It's like Christmas! So that, in addition to waffles with MR, made my Saturday morning just perfect. Then - to open the box and discover an array of gourmet goodies - yum! Part of the deal with Foodzie Sample Boxes is that they like you to give feedback, so I thought I'd share it with you all as well. If you have a foodie in your life, check out their site - they have amazing products that are great for Christmas, etc.

First Snow of the Season

 As I type, the snow is falling and the fire is roaring; my peppermint tea is cooling and the dog is snoring beside me. Ladies and Gentlemen, I present: Our First Snow! Well, not really our first snow, but as CA transplants we've been waiting for the much-talked about winter madness that will hit the Northwest - and this morning we're starting to get a taste...With a high of 34 degrees today we should see snow for awhile, and on Saturday we're in for a low of 5. That's right FIVE degrees. Those are the days where snuggling, hot cocoa, and the fire are the only available options - and I'm totally fine with that. :)

Numi likes to watch the snowflakes fall...

It's her birthday today! Visit her over here and wish her a fabulous one! She is the older sister I always wished for - and an amazing wife to my brother and phenomenal mother to my nephew Landon. We are so thankful for her.

A New Season

Well folks - we're back! Seattle was restful, fabulous, freezing, adventurous, and wonderful. Matthew and I explored the city during the day, enjoying old favorites like the market, Ethiopian food and great book stores. We walked everywhere and enjoyed being bundled up, clasping hands and holding warm drinks while enduring the very cold weather. After five Amanda joined us for IKEA, Sushi night, the symphony, and fun times watching movies and just hanging out. Pictures coming soon...

Highlights from the trip:
1. Walking through IKEA and emerging having spent under $20.
My only explanation is Divine Intervention.

2. Matthew actually enjoying our Sushi dinner - another thing crossed off my 30 List!

3. Sitting second row center for the symphony - Tchaikovsky's Piano Concerto in B flat Minor was phenomenal. The pianist's fingers actually blurred before our eyes!
Matthew was in heaven.

4. Ethiopian food! Enat's did not disappoint. I love going back there two years later and having the same woman as before serve us the delicious food - family run businesses are the best!

5. Breakfast at 5 Spot and our Trader Joe's run.
(Oh Trader Joe's, how oh how do I live
without you here in Spokane?!)

So now we're back home and I'm getting excited for snow, Thanksgiving,
and seeing the family.

We're off to Seattle today! These past few months have been go go go, and I can't tell you how excited I am to hang out with Matthew - just the two of us! No dog, homework, emails, fickle clients - exploring Seattle with Matthew and spending time with Amanda is just what the doctor ordered.

4 days of blissful vacation...here we come! :)

Thoughts on Simplicity

As we enter this fabulously festive time of year, I'm reminiscing on my annual goal of saying sane during the holidays. That coinciding with my recent perusal of our Christmastime London pictures, and I'm waxing on the benefits of Simplicity. For a few months now MR and I have been trying to simplify as much as possible. Inspired by our stay in London, we're considering downsizing to one car, taking a better look at our cell phone plan (and while I've been pining away for an iphone, I've decided that's a luxury I can live without for now), and a host of other things that seem a bit excessive for our current lifestyle.

Some things that I'm endeavoring...

1. Turning off my cell phone - this is a hard one for me!

2. Checking email twice daily...and generally 
spending less time online. 

3. Going to bed early.

4. Creating a weekly meal plan/shopping list - saves money and the nightly dilemma of "what are we going to eat?!"

5. Continue to purge as much unneeded clutter as possible. Less "stuff" is always good!

6. And generally trying to use less. I love thinking about our tiny London flat - no car, no dishwasher, no cell phones - 
and we were happy!

Folks, we're into November! The leaves are fiery red, the rain will be quickly turning to snow, and yes - Christmas is oh-so-soon! Here in the Inland Northwest we are experiencing fall like we never have before - the weather has been so fabulously fall-like I'm having to hold back from taking pictures of nearly everything. A girl can only take so many pictures of her front yard...no matter how gorgeous the leaves are!

And my second favorite holiday, only second to Christmas, is coming up: Thanksgiving! This year Matthew and I are doing something completely different - we'll be celebrating on our own up here in Spokane instead of with out usual gang if family members. I have to admit that I'm a little bit sad...thinking about Yam debates, organic turkey foraging, the little ones...but it's an adventure of sorts. We'll see how it goes!
